Champagne is one of the most famous and most admired drinks in the world. The French first invented champagne during the seventeenth century
by a monk called Dom Perignon.

Most Champagne is a blend of many different base wines. Once they have been blended and bottled, a liqueur de tirage is used, which includes an assortment of reserve wines, sugar and yeast. This mixture creates a 'secondary fermentation' inside the bottle which produces the bubbles so important
for Champagne. After this has happened, legally the Champagne is required to be aged for 15 months in bottle.

At Lanson, however, they insist on ageing all of their Champagnes such as Lanson black label for not less than 36 months to ensure that when you see it for sale, it is always without a doubt ready for consuming.
